Our irresistible oven baked pork cutlets are a perfect winter warmer as the seasons change. Whether you prefer bone-in pork cutlets or boneless pork chops, this recipe will be a crowd favourite around the dinner table.

We have opted for bone-in pork cutlets as they tend to have extra flavour, but it’s also an ideal recipe for boneless pork chops if you’re looking for added convenience. When buying pork cutlets or chops, there are a few key things you need to look for:

  1. Choose your meat from a reputable source, like us at Pendle Hill Meat Market! Ensuring the cuts are fresh will result in a delicious and satisfying meal.
  2. Look for pork cutlets that are free from any discolouration, pale or greyish tone indicates poor quality or improper handling. Instead opt for chops with a consistent pale pink colour.
  3. Next ensure that the pork cutlets you select have a good balance of lean meat and marbling. Marbling is desirable for added flavour and tenderness, however, excessive fat may result a greasy texture.
  4. And finally, make sure each cutlet weighs between 200g and 250g to retain moisture and flavour when cooked in the oven.

Ingredients you’ll need to make our delicious pork cutlet recipe: 

  • 4 pork cutlets
  • 800g baby potatoes 
  • 1 tbsp olive oil
  • Salt and pepper

Ingredients you’ll need to make our special pork cutlet rub:

  • 1 tsp Worcestershire Sauce
  • 2 tbsp tomato sauce
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar (or white)
  • 1 tbsp olive oil (or vegetable or canola oil)
  • 1 clove garlic, minced (or garlic powder)
  • 2 tsp apple cider vinegar

How to cook our Oven Baked Pork Chops with Potatoes recipe, method:

  1. Fire up the oven - Start by preheating your oven to 220°C for a standard oven or 200°C for a fan forced or convection oven. While the oven is preheating, toss the potatoes in oil, salt, and pepper, giving them an even coating. Spread them out on a lined baking tray and let them bake for 15 minutes to get a head start on the pork cutlets. 
  2. Bring the flavour - It’s time to create our mouthwatering rub for the pork cutlets. In a small bowl, mix together all of the rub ingredients and coat the pork cutlets, making sure to save some for later basting.
  3. Get back to the tray - Take the tray out of the oven and give the potatoes a toss, pushing them to the edge to make room for the star of the show – the pork cutlets. Place the seasoned pork cutlets on the tray, and let them all bake together for 15 minutes, allowing the pork to cook and become tender.
  4. Time to sizzle - Remove the tray from the oven and switch to the broiler/grill on high heat. Flip the pork cutlets, spoon over the reserved rub from step #2, and let them sizzle under the broiler for 7-10 minutes. Tip: bast the pork cutlets every 2 minutes with the golden juices from the tray for extra flavour!
  5. Savour the goodness - It's time to dig in and serve the mouthwatering pork cutlets, scraping those irresistible tray juices over them for added succulence. For a finishing touch, garnish with fresh parsley and serve with the delicious potatoes.
