Beef Enchiladas Recipe

Get your sombreros at the ready because your in for a mexcellent night with this enchiladas recipe. Get the whole family together to enjoy this extra cheesy dish!

Prep time: 20 mins Cook time: 30 mins Serves: 4


INGREDIENTS:

1 tbsp sunflower oil

500g mince

1 medium onion, finely chopped

1 yellow pepper, deseeded and thinly sliced

400g can chopped tomatoes

400g can red kidney beans in chilli sauce

1 tbsp fresh lime or lemon juice

2 heaped tbsp roughly chopped coriander, plus extra to garnish

6 regular or 8 mini flour tortillas

50g reduced-fat mature cheddar, coarsely grated

large mixed salad, to serve

 

METHOD

  1. Heat oven to 200C/180C.
  2. Fry the mince, peppers and onion for approximately 5 mins.
  3. Stir in the kidney beans and chopped tomatoes.
  4. Simmer for 10 minutes stirring regularly
  5. Mix in the lime juice and coriander and season
  6. Add the mixture to the tortillas and roll up.
  7. Line them along a lightly greased ovenproof dish.
  8. Sprinkle with cheese and back for 15 minutes.
  9. Serve with salad and enjoy your enchiladas
