Balsamic Steak with Tomato Pasta Salad

This balsamic steak with tomato pasta salad is packed with flavour and is sure to keep you and your family full and satisfied. Cook the steak for as little or as long as you like and enjoy the fresh basil leaves and cherry tomatoes.

INGREDIENTS

200g penne rigate

2 tablespoons olive oil


1/4 cup balsamic vinegar


2 garlic cloves, crushed


4 (150g each) beef sirloin steaks


olive oil cooking spray


250g cherry truss tomatoes


1/4 cup small fresh basil leaves


50g baby rocket

 

METHOD

  1. Mix the oil, vinegar and half of the garlic in a bowl and add the steak turning it over to fully cover it.
  2. Cook the pasta in boiling water with salt.
  3. Cook the steak on medium heat until it is to your liking.
  4. Cook tomatoes for approximately 3 mins until they are soft.
  5. Add the cooked tomatoes, rocket, basil and remaining garlic to the pasta. 
  6. Toss together and season with salt and pepper.
  7. Top with the steak.
  8. Enjoy your balsamic steak with tomato pasta salad.
