Get ready for a flavourful feast with our Oven Baked Pork Cutlets with Potatoes recipe. Our irresistible oven baked pork cutlets are a perfect winter warmer as the seasons change. Whether you prefer bone-in pork cutlets or boneless pork chops, this recipe will be a crowd favourite around the dinner table.

We have opted for bone-in pork cutlets as they tend to have extra flavour, but it’s also an ideal recipe for boneless pork chops if you’re looking for added convenience. When buying pork cutlets or chops, there are a few key things you need to look for:

  1. Choose your meat from a reputable source, like us at Pendle Hill Meat Market! Ensuring the cuts are fresh will result in a delicious and satisfying meal.
  2. Look for pork cutlets that are free from any discolouration, pale or greyish tone indicates poor quality or improper handling. Instead opt for chops with a consistent pale pink colour.
  3. Next ensure that the pork cutlets you select have a good balance of lean meat and marbling. Marbling is desirable for added flavour and tenderness, however, excessive fat may result a greasy texture.
  4. And finally, make sure each cutlet weighs between 200g and 250g to retain moisture and flavour when cooked in the oven.

Servings: 4

Prep Time: 5 minutes

Cooking Time: 40 minutes

Ingredients you’ll need to make our delicious pork cutlet recipe:

  • 4 pork cutlets
  • 800g baby potatoes
  • 1 tbsp olive oil
  • Salt and pepper

Ingredients you’ll need to make our special pork cutlet rub:

  • 1 tsp Worcestershire Sauce
  • 2 tbsp tomato sauce
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar (or white)
  • 1 tbsp olive oil (or vegetable or canola oil)
  • 1 clove garlic, minced (or garlic powder)
  • 2 tsp apple cider vinegar

How to cook our Oven Baked Pork Chops with Potatoes recipe, method:

  1. Fire up the oven - Start by preheating your oven to 220°C for a standard oven or 200°C for a fan forced or convection oven. While the oven is preheating, toss the potatoes in oil, salt, and pepper, giving them an even coating. Spread them out on a lined baking tray and let them bake for 15 minutes to get a head start on the pork cutlets.
  2. Bring the flavour - It’s time to create our mouthwatering rub for the pork cutlets. In a small bowl, mix together all of the rub ingredients and coat the pork cutlets, making sure to save some for later basting.
  3. Get back to the tray - Take the tray out of the oven and give the potatoes a toss, pushing them to the edge to make room for the star of the show – the pork cutlets. Place the seasoned pork cutlets on the tray, and let them all bake together for 15 minutes, allowing the pork to cook and become tender.
  4. Time to sizzle - Remove the tray from the oven and switch to the broiler/grill on high heat. Flip the pork cutlets, spoon over the reserved rub from step #2, and let them sizzle under the broiler for 7-10 minutes. Tip: bast the pork cutlets every 2 minutes with the golden juices from the tray for extra flavour!
  5. Savour the goodness - It's time to dig in and serve the mouthwatering pork cutlets, scraping those irresistible tray juices over them for added succulence. For a finishing touch, garnish with fresh parsley and serve with the delicious potatoes.

The English have brought us many great things — Coldplay, Prince Harry, Love Actually and most importantly, the classic full English breakfast recipe (OR a 'fry up'). It is the ultimate feed, the pick-me-up when you’re feeling down, and just like a big warm hug, it never disappoints.

There are many regional versions of this staple breakfast recipe, however, ours consists of baked beans, old English pork sausages, bacon, mushrooms, tomatoes, eggs and toast. And of course, no English breakfast is complete without a hot tea or coffee.

  • 1 can of beans
  • 4 old English pork sausages
  • 4 slices of bacon (any cut of your choice)
  • 1 large mushroom cup sliced
  • 2 small tomatoes
  • 4 slices of bread
  • 4 eggs

How to cook our version of a Full English Breakfast recipe, method:

  1. Prepare the beans - Gently heat the beans in a small pot over low heat, and keep warm on a low heat while you prepare the rest of the recipe.
  2. Cook the pork sausages - Place the pork sausages in a medium to medium-low heat pan. Cook them until they turn a rich brown color and are thoroughly cooked, turning occasionally.
  3. Cook the bacon - Using the same pan, cook the bacon slices, until they are crispy and delicious (or to your tasting)
  4. Sauté the mushrooms - In another pan, add a splash of oil and heat it over medium heat. Add the mushrooms and let them cook until they become deliciously browned and caramelised.
  5. Sear the tomato - In the same pan, briefly sear the cut side of the tomato until it develops a slight char.
  6. Toast the bread - Wipe the pan clean and add a bit of oil or butter. Heat it over medium heat and fry the bread slices until they turn golden brown, flipping them and adding more oil or butter as needed.
  7. Prepare the eggs - Using the same pan, fry the eggs to your desired level of doneness, whether it's sunny-side-up, over-easy, or you could also try scrambled or poached eggs.
  8. It’s time to serve and enjoy - Arrange all the cooked components on your plate: the pork sausages, bacon, sautéed mushrooms, seared tomato, fried bread, and your perfectly cooked eggs. It's time to dig in and enjoy your mouthwatering Full English Breakfast while your coffee or tea is still hot.

We’ve created a Vietnamese grilled pork chops recipe that makes replicating Vietnamese resturant dishes at home easy! All you need is a few common ingredients for the marinade, some fresh and delicious pork chops and a kitchen.

To ensure your Vietnamese grilled pork chops are absolute show-stoppers, here's our tip: Opt for thicker cut pork chops that will deliver a juicy and tender texture, preventing any chance of dryness when cooking.

Servings: 4

Prep Time: 25 minutes

Cooking Time: 15 minutes

  • 4 (about 250g each) pork chops, rind off
  • 2 plump Lebanese cucumbers
  • ¾ cup coriander leaves
  • ½ cup mint leaves
  • ½ small red onion, cut into very thin wedges
  • 1/3 cup roasted peanuts, roughly chopped
  • Steamed jasmine rice and lime wedges, to serve

Vietnamese Marinade -

  • 2 garlic cloves, crushed
  • 2 small red chilli, deseeded and finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons peanut oil

Get ready to treat your taste buds with these mouthwatering Vietnamese grilled pork chops. Follow these simple steps:

  1. Amp up the flavour of the pork chops - Place the pork chops into a large snap-lock bag. To make the delicious pork marinade, combine all ingredients in a screw-top jar. Shake well until it’s all combined. Remember to reserve ½ cup of the marinade for later. Pour the remaining marinade into the snap-lock bag, seal it tight, and give it a good shake to coat the pork chops. Pop the bag in the refrigerator and let the flavours marinate for 15 minutes (or longer if you have time).
  2. It’s time to prepare the salad - Use a vegetable peeler to slice the cucumbers length-ways in thin ribbons. Combine the cucumber ribbons, coriander, mint and diced red onion in a bowl. Chill until you're ready to enjoy.
  3. Grill it up - Heat up a greased char-grill plate or barbecue over medium-high heat. Add the marinated pork chops and cook for 8-10 minutes or until just cooked through. As they cook, brush them with some of the remaining marinade to add extra flavour!
  4. It’s time to serve and savour - Transfer the grilled pork chops to a plate, cover them, and let them rest for 5 minutes to allow the juices to redistribute and the flavours to settle. Once the meat has rested,  serve the succulent Vietnamese grilled pork chops with the crisp cucumber salad and drizzle any remaining Vietnamese marinade overtop. We also recommend serving it with steamed Jasmine rice and lime wedges for a complete meal!

Get creative in the kitchen and whip up our delectable Pork and Pea Pastizzi recipe for your next feast. A pastizz is a traditional pastry from Malta, usually filled with curried peas or other savory fillings. We’ve put a spin on the well-known Maltese food and combined it with mouthwatering pork.

We recommend using pork shoulder in this recipe, it’s a wonderfully versatile cut that is perfect for slow cooking to make tender and juicy pork.

Makes: 30-40 pastizzi

Prep Time: 1 hour

Cooking Time: 6 hours

Ingredients for Pastizzi:

  • 20 sheets of phyllo pastry
  • 1kg boneless pork shoulder
  • 150g frozen peas
  • Handful of dried mint
  • 100g flaked almonds (toasted)

Ingredients for spice paste:

  • 10 whole cloves
  • 3 star anise
  • 2 cinnamon sticks
  • 250ml soy sauce
  • 60ml fish sauce
  • 55g brown sugar
  • 2 tbsp baharat or Lebanese seven spice
  • 1 tbsp minced garlic

How to cook our Pork and Pea Pastizzi recipe:

  1. To prepare for the dish, it is recommended that you marinate the pork shoulder overnight in the spice paste to enhance the flavour and juiciness. Combine all the ingredients for the spice paste in a food processor and grind until you create a smooth paste. Rub the spice paste over the pork shoulder, cover and refrigerate overnight.
  2. Preheat your oven to 160°C. Place the pork shoulder with the spice paste in an oven-proof casserole dish. Next, cover the pork shoulder with room temperature water and place the lid on top. Cook in the oven for 4-5 hours until the pork shoulder is tender and falling apart. Once tender, remove the pork from the dish and allow it to cool on a separate tray.
  3. Add extra flavour by straining the braising liquid through a fine sieve into a medium saucepan. Cook the braising liquid over a high heat for 30-40 minutes until reduced to a glaze-like consistency.
  4. Bring peas to the boil and strain when they’re tender to the touch.
  5. Shred the pork shoulder once it’s cooled. Add the reduced sauce, peas, dried mint and almonds to the pork. Combine to mix well and then chill in the fridge for 30 minutes.
  6. Cut a pastry sheet in half and make a small pocket out of the pastry resembling a small, shallow bowl. FIll pastry with a generous tablespoon of filling and then fold edges firmly to seal to form a semicircle. Swiftly and gently, pull on either end of the pastry, elongating the pastry to form a classic pastizzi shape. Transfer pastizzi to an oven tray lined with baking paper. Repeat until you’ve used all of your pastry sheets and pork filling.
  7. Preheat your oven to 220°C and cook the pastizzi for 12-15 minutes (or until golden brown). Once cooked, serve plain or with a variety of sauces.
