  • 20 sheets of phyllo pastry
  • 1kg boneless pork shoulder
  • 150g frozen peas
  • Handful of dried mint
  • 100g flaked almonds (toasted)

  • 10 whole cloves
  • 3 star anise
  • 2 cinnamon sticks
  • 250ml soy sauce
  • 60ml fish sauce
  • 55g brown sugar
  • 2 tbsp baharat or Lebanese seven spice
  • 1 tbsp minced garlic

How to cook our Pork and Pea Pastizzi recipe:

  1. To prepare for the dish, it is recommended that you marinate the pork shoulder overnight in the spice paste to enhance the flavour and juiciness. Combine all the ingredients for the spice paste in a food processor and grind until you create a smooth paste. Rub the spice paste over the pork shoulder, cover and refrigerate overnight.
  2. Preheat your oven to 160°C. Place the pork shoulder with the spice paste in an oven-proof casserole dish. Next, cover the pork shoulder with room temperature water and place the lid on top. Cook in the oven for 4-5 hours until the pork shoulder is tender and falling apart. Once tender, remove the pork from the dish and allow it to cool on a separate tray.
  3. Add extra flavour by straining the braising liquid through a fine sieve into a medium saucepan. Cook the braising liquid over a high heat for 30-40 minutes until reduced to a glaze-like consistency.
  4. Bring peas to the boil and strain when they’re tender to the touch.
  5. Shred the pork shoulder once it’s cooled. Add the reduced sauce, peas, dried mint and almonds to the pork. Combine to mix well and then chill in the fridge for 30 minutes.
  6. Cut a pastry sheet in half and make a small pocket out of the pastry resembling a small, shallow bowl. FIll pastry with a generous tablespoon of filling and then fold edges firmly to seal to form a semicircle. Swiftly and gently, pull on either end of the pastry, elongating the pastry to form a classic pastizzi shape. Transfer pastizzi to an oven tray lined with baking paper. Repeat until you’ve used all of your pastry sheets and pork filling. 
  7. Preheat your oven to 220°C and cook the pastizzi for 12-15 minutes (or until golden brown). Once cooked, serve plain or with a variety of sauces.

Ingredients

  • 5 slices bacon
  • 1 clove garlic, minced
  • 1 pound ground pork
  • Kosher salt and freshly ground pepper
  • 1/4 teaspoon dried rubbed sage
  • Freshly ground pepper
  • 4 potato buns, split
  • Unsalted butter, softened, for spreading
  • Coleslaw, for topping

Method

  1. Use a food processor to pulse the bacon and garlic until coarsely ground.
  2. Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the centre of each with your thumb to prevent the burgers from bulging when grilled.
  3. Preheat a grill to medium-high. Season the patties with pepper. Grill for 5 to 6 minutes. Turn and grill until the other side for 5 minutes or until cooked. While the patties are cooking, spread the cut sides of the buns with butter and toast on the grill.
  4. Serve the patties on the buns; top with coleslaw.

  • 2 lbs minced meat (any variety, we recommend using more pork)
  • 2 tablespoons salt

Method

  1. Mix all the ingredients together very well. 
  2. Leave in the fridge for about 24-48 hours. 
  3. Stuff the casings making sure that there is no excess air inside.
  4. Roll with a rolling pin and hang in a cool, dry place, preferably with no direct sunlight. 
  5. Roll daily for about two weeks, trying to press out any excess air, use a needle to let the air out if necessary. 
  6. Consume when dry enough.

2½ kg boneless pork shoulder, skin removed

3 tbsp olive oil

2 tsp paprika

2 tsp mustard powder

1 tsp garlic salt

1 tsp onion salt

Method

  1. Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
  2. Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper with the liquid smoke, if using. Brush all over the meat.
  3. Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
  4. Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.

This simple Classic Quiche Lorraine recipe brings together the wonderfully comforting flavours of buttery shortcrust pastry, smoked bacon and creamy cheese, in the dreamiest of savoury bakes.

 

INGREDIENTS

  • 2 sheets ready-rolled shortcrust pastry
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 4 rashers bacon, rind removed, finely chopped
  • 1 cup grated tasty cheese
  • 3 eggs
  • 1 teaspoon plain flour
  • 300ml cream
  • 1/2 cup milk

 

METHOD

  1. Preheat oven to 200°C. Lightly grease a fluted 3cm deep, 23cm (base), loose-base flan pan.
  2. Line base and sides of flan with pastry. Trim excess. Line pastry with baking paper. Half-fill with dried beans or rice. Bake for 10 minutes. Remove paper and beans. Bake a further 10 minutes or until golden.
  3. Heat oil in a frying pan over medium-high heat. Add onion and bacon. Cook for 3 minutes. Drain on paper towels. Cool. Sprinkle over pastry. Top with cheese.
  4. Reduce oven temperature to 180°C. Whisk remaining ingredients and salt and pepper in a jug. Pour over bacon. Place onto tray. Bake for 30 to 35 minutes or until set. Stand for 5 minutes.
  5. Serve your Classic Quiche Lorraine.

Find out below our tasty pork shoulder roast recipe. This slow roast pork shoulder cooks for 2.5 hours, for juicy meat and a perfect meal for the entire family.

 

Ingredients

  • 2.2kgs pork shoulder
  • 450g yellow potatoes
  • 1-2 capsicum (depending on size and preference)
  • 1 yellow onion
  • 1 garlic clove
  • salt
  • pepper

 

Method

  1. Take pork shoulder out of the fridge about 1 hour before roasting and let rest on the kitchen counter.
  2. Preheat oven to 220C.
  3. Make little cuts into the pork's skin being careful not to cut the meat, only the skin, about 2.5 cm apart.
  4. Generously salt and pepper the piece of meat using your fingers to rub salt into the cuts in pork skin.
  5. Place pork with skin side up in a large roasting pan or a deep baking sheet.
  6. Add cut-up vegetables and whole garlic cloves in their skin around the pork, salt and pepper vegetables and then pour a couple of spoons of vegetable oil over the vegetables and mix well.
  7. Roast uncovered in a very hot oven for about 30 minutes.
  8. Take out from oven to cover with aluminium foil making sure it holds tight to the borders of the roasting pan or baking sheet.
  9. Reduce oven's temperature to 180 C and roast for 2 hours.
  10. Take out of the oven and let rest for about 10-15 minutes before serving.

A delicious Asian-inspired meat dish, this Sticky Pork Belly recipe with hoisin sauce and Lebanese cucumbers is a crowd pleaser. 

Serves: 4

Ingredients

  • 750g pork belly
  • 80ml hoisin sauce
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 3 lebanese cucumbers sliced
  • ½ wombok cabbage shredded
  • 30g crispy shallot
  • ½ bunch mint leaves
  • 1 tbsp peanut oil
  • 1 tbsp wine vinegar

Method

  1. Preheat oven to 200 degrees fan-forced. Place the pork belly in a single layer on the tray and roast for 15 minutes until light golden on both sides.
  2. Combine the hoisin sauce, soy sauce, honey and sesame oil. Remove the pork from the oven and coat the pork using half of glaze.
  3. Roast the pork again, turning and glazing every 10 minutes for another 30 minutes.
  4. For the salad, combine the cucumber, cabbage, shallot and mint with a drizzle of peanut oil and vinegar.
  5. Serve the sticky pork belly with salad.
