With the mixture of fresh ingredients along with our juicy and tender pork shoulder, enjoy your favourite Indian flavours. There aren’t that many pork curries in India, so we made sure to bring the best out of the few! With the rich flavours, this dish takes you to the heart of India and their authentic flavours.

Ingredients
- 10g chopped ginger
- 8 cloves chopped garlic
- Tomato chopped (4 pieces)
- 60ml sunflower oil
- ½ tsp brown mustard seeds
- 15 curry leaves
- 2 onions chopped
- 1-3 green chilies
- 1 tsp ground cumin
- ½ tsp ground turmeric
- ½ tsp chili powder
- 500g pork shoulder
- 1 tbsp white wine vinegar
- Coriander sprigs
Ingredients for the spice blend
- 1 ½ tsp cumin seeds
- 2 tsp coriander seeds
- 3 cloves
- 1cm cinnamon stick
- 1 tsp fennel seeds
- 10 black peppercorns
- Pinch of brown mustard seeds
Method
- For spice blend, dry-roast ingredients in medium heat pan until colour turns to gold. Then grind the mix into powder form.
- In a mixer, add 2 tsp of water, tomato, garlic and ginger and make into a smooth paste.
- In a large medium to low heated casserole, heat up oil and add in mustard seeds. Once the seeds start to pop, add in curry leaves, onion and chili and stir until colour turns brown.
- Add to the tomato mixture, cumin, turmeric and chili powder and cook for 10- 12 minutes until it is reduced.
- Increase the heat, and add the pork and cook until colour turns brown. Then add in vinegar, ½ cup of water and 3tsp of the spice blend.
- Once it starts to boil, reduce the heat to low and let it simmer for 2 hours until the pork is tender.
- If needed, season the curry by adding in more of the spice blend, add the chopped coriander and continue to stir.
- Enjoy with roti, naan, paratha, rice etc.
