Tired of the same dinner week in and week out? This chorizo and pepper lasagne recipe gives your classic weeknight special and exciting and spicy twist. The creamy sauce paired with the Spanish sausage in tomato sauce go perfectly together. 

Prep time: 10 mins Cook time: 1hr 10 mins Serves: 6


1 tbsp olive oil

2 onions, sliced

200g pack cooking chorizo sausages, halved length ways and sliced

1 value pack peppers (about 4, any mix of colours), deseeded and diced

500ml carton passata

500g tub natural fromage frais

1 egg

100g Red Leicester, grated

300g dried lasagne (9 sheets)

Small handful basil leaves, to serve


  1. Heat oven to 180C/160C.
  2. Fry the onions in a pan for approximately 10 mins.
  3. Add in the peppers, chorizo and seasoning.
  4. Add 150ml of water along with the passata and cook for a further 10.
  5. Mix the cheese and fromage frais and beat in the egg to a bowl and season.
  6. Spoon a third of the chorizo mixture into the base of a lasagne dish.
  7. Top with three sheets of lasagne 
  8. Add another third of the chorizo mixture and layer with three more lasagne sheets. And repeat with the remaining chorizo mixture and lasagne sheets.
  9. Pour the cheese sauce on top and bake for approximately 45 minutes.
  10. Garnish your chorizo and pepper lasagne with fresh basil.
