Portuguese Chicken and Crispy Potatoes Recipe

Amateurs of Portuguese chicken and potatoes - rejoice! With the base of potato slices roasting in the chicken's delicious oven-baked flavours - you will be reaching food heaven in no time. 

Ingredients

Marinade Ingredients

  • 2 dried ancho chillies - re-hydrated
  • 1 tbsp smoked paprika
  • 6 garlic cloves
  • 1 tbsp  kosher salt
  • 1 tsp coriander
  • 75 ml red wine vinegar
  • 75 ml olive oil
  • ½ tsp pepper

Cilantro Sauce Ingredients

  • 235 ml plain yoghurt
  • 1 bunch cilantro, chopped
  • ½ tsp  kosher salt
  • ½ tsp  coriander
  • Pepper
  • 15ml lemon juice
  • 15ml olive oil

Method

  1. Place dried chilies in boiling water for 20 minutes.
  2. Prepare your chicken by cleaning it out and drying it. After, with breast down, cut down through both sides of the spine removing the remainders. Press down on the chicken breast bone, and flatten the chicken.
  3. Blend the marinade ingredients into a paste and add one layer of the marinade to the baking pan.
  4. Place potato slices on the baking pan and season it with the kosher salt.
  5. Marinate the chicken with the marinade and place the chicken on the baking pan and into the oven.
  6. Flip the chicken after 15 minutes and place it back into the oven.
  7. Brush more marinade after 10-15 minutes and let it sit in the oven for another 15-20 minutes.
  8. Broil for a few minutes until the skin gets crispy and brown.
  9. Remove the portuguese chicken, and let it rest for  5-10 minutes.
  10. Add the cilantro sauce ingredients together.
  11. Cut the Portuguese chicken into pieces and serve with the cilantro sauce on the side.
