Pepperoni Pizza Recipe

Nothing beats a homemade Pepperoni Pizza. This will be a new go-to weekly family dinner.

INGREDIENTS

PIZZA DOUGH

  • 2-3/4 cups lukewarm water
  • 1 1/2 tablespoon Instant Yeast
  • 1 1/2 tablespoons salt
  • 1 tablespoon sugar
  • 1/4 cup extra virgin olive oil
  • 6 1/2 cups unbleached all-purpose flour or ‘00’ flour

PIZZA

  • 1/2 Cup Tomato Passata
  • Pepperoni (the more the better)
  • 2 Cups Mozzarella Cheese
  • 1 tablespoon Parmesan Cheese, grated
  • 1/2 teaspoon Italian Seasoning
  • 1 teaspoon Olive Oil
  • 1/2 tablespoon unsalted Butter, melted
  • 2 teaspoon Parmesan Cheese
  • 1 teaspoon salt

METHOD

PIZZA DOUGH

  1. In the bowl of your standing mixer, fitted with the dough hook attachment, mix the yeast, salt, sugar, and olive oil with the water.
  2. Slowly add the flour without kneading.
  3. Transfer dough to large bowl. Cover (not airtight), and allow to rest at room temperature until dough rises and collapses (or flattens on top), approximately 2 hours.
  4. The dough can be used immediately after the initial rise or it can be refrigerated in a container (not airtight) for max 12 days

PIZZA

  1. Heat the oven to 200 C
  2. Place the pizza pan in the oven to get hot.
  3. Stretch the pizza dough into a large circle by holding it up in front of you and turning the dough clockwise, grabbing quickly with one hand after another or by tossing the dough. This creates a better crust, but you can roll it out if you wish.
  4. Place on a pizza wheel or parchment paper to help you to transfer the dough to the pan.
  5. Quickly remove the pan from the oven and transfer the dough to the pan.
  6. Working fast, spread a little tomato passata on the pizza, top with both cheeses and then the pepperoni.
  7. Sprinkle 2 tablespoons of cheese over the finished pizza.
  8. Combine the olive oil and butter and brush the crust then sprinkle the parmesan and salt over the crust.
  9. Bake the pizza for 6-8 minutes.
  10. Remove from the oven and allow to cool for 2 minutes before cutting into.
  11. Enjoy your homemade Pepperoni Pizza!
