For the ham:
1/2 triple smoked leg ham, knuckle end (around 3.5 kg)
1 large carrot, peeled and cut into 1-inch chunks
1 Spanish onion, skin on, halved
3 sticks celery, cut into 1-inch chunks
Small bunch of thyme
2 bay leaves
10 black peppercorns
For the glaze:
25ml wine vinegar
100g brown sugar
100ml Madeira
Juice of 1 orange
100g honey
Cloves
